Yum Alert: Raspberry Ice Cream Sandwiches

Labor Day Raspberry Ice Cream Sandwiches recipe

Raspberry ice cream in between coconut lemon shortbread. What could be better? Sour and sweet. The perfect labor day dessert.

Raspberry Ice Cream Ingredients:

  • 3cups strained raspberry puree (made from blending and straining about 30 oz. raspberries. Strain well! Frozen and defrosted raspberries work fine.)
  • 1 1/2cup heavy cream
  • 1 1/2cup half and half
  • 1/2vanilla bean
  • 1cup sugar
  • 5egg yolks
  • 1tablespoon Chambord (creme de cassis works in a pinch, but you can also skip this

Coconut Lemon Shortbread:

  • 1cup unsweetened finely shredded coconut
  • 1 1/2cup unsalted butter (use good quality), soft but still slightly cooler than room temperature
  • 1cup sugar
  • 1teaspoon sea salt
  • 1teaspoon lemon juice
  • the zest of 2 lemons
  • 2 2/3cups all purpose flour
