1½ pints Fresh Strawberries
4 tbsp. Chopped Ginger
1 cup Sugar
1 cup Cold Water
1 bottle Champagne
1. Juice 1 pint fresh strawberries in a vegetable-fruit juice machine or food processor. Strain through a fine sieve.

2. Combine chopped ginger with water and sugar in a small sauce pan, set over medium heat. Remove from heat as soon as the liquid boils. Allow to cool completely before straining through a fine sieve.
3. In a champagne flute or coup glass combine 1½ oz. strawberry juice with 1½ ounces ginger syrup. Stir, and top with champagne to fill the glass. Garnish with a sliced strawberry.
