Yum Alert: Vegan Soba Salad with Marinated Tofu, Mint & Scallions

Chilled noodles are super summer comfort-food. This soba dish, which uses tofu and herbs, makes a vegetarian/vegan protein-packed lunch or dinner. For those watching sugar intake, you can substitute sugar with stevia. Image and recipe via alexandra’s kitchen.

Ingredients:

1/4 cup soy sauce
2 tablespoons rice vinegar
2 tablespoons mirin
1.5 tablespoons sesame oil
1-2 cloves garlic, minced
a small nub of ginger, minced to yield about 1-2 tablespoons
1 to 3 teaspoons sugar, depending on your taste
1/4 to 1/2 teaspoon crushed red pepper flakes
Sriracha (optional)
