Yum Alert: Vegan Cloud Cakes

Recipe for delicious vegan pancakes.

Sometimes eating something that isn’t so good for you like pancakes is made completely acceptable when you throw the word vegan in front of it. Somehow, it just makes it totally okay!

Ingredients:

  • 3 cups flour
  • 3 tbl. turbinado sugar
  • 3 tsp. baking powder
  • 1 1/4 tsp salt
  • 2 tbl. cinnamon
  • 3 tsp. apple cider vinegar
  • 1 1/2 cups almond milk
  • 3/4 cups water
  • 3 1/2 tbl. vegetable oil
  • 2 tsp. vanilla extract
  • 1 tbl. vegan margarine (ie. Earth Balance)

Directions:

Mix flour, sugar, baking powder, salt and cinnamon in bowl until well combined.

Add the remaining ingredients, excluding the vegan margarine, as listed above.

Mix until well combined. Do not over mix.

Coat frying pan with Margarine and heat on low-medium. When margarine is hot, pour in a ladle full of pancake batter.

When the pancakes start to show air bubbles, their ready to be flipped. About 1 1/2 – 2 minutes on each side.
