Yum Alert: Strawberry Cupcakes with Strawberry Frosting

Strawberry Extravaganza. Cupcake Style.

Strawberries are filled with vitamins, heart healthy antioxidants, and flavor. Infuse them in to a cupcake, and it’s big, flavor-ridden good times as far as I’m concerned. Chocolate’s fine & all, but give me a strawberry cookie, strawberry lollipop, strawberry flavored anything and I’m a happy gal.

Ingredients
Strawberry Sauce
2 cups of fresh strawberries, cut in half and stem removed
2 tbl sugar

Cupcakes
2 3/4 cups all-purpose flour
1/2 c cake flour (not self rising)
1 tbl baking powder
1 t salt
2 sticks unsalted butter, room temperature
2 1/4 cups sugar
1 1/2 t vanilla extract
3 large whole eggs, plus 1 egg white
1 c milk
1/2 c strawberry sauce
1 c finely chopped strawberries, plus more for garnish

Frosting
8 ounces cream cheese, room temperature
1/2 stick butter
4 cups sifted powdered sugar
1/8 c of strawberry sauce
