Yum Alert: Strawberry Apple Salad

This fresh spring salad is a perfect light appetizer before lunch or dinner.

Just like there are days when all you want to do is pig out, there are days when all you want to do is keep it light. This salad has got you covered. It’s fresh (tastes like spring) and healthy. It’s perfect for a light appetizer before dinner.

Ingredients

1 cup strawberries, sliced

1 cup apples, sliced

1 cup roasted red bell pepper, sliced

1 organic spring medley lettuce mix ( I buy the bigger bag and use as much as I need from it)

1 avocado, sliced

1 cucumber shreds, peeled lengthwise

1 carrot strips, shreds lengthwise

10 cherry tomatoes, cut in half (makes 20 halves)

Handful crumbled feta, goat or blue cheese (optional)

1-2 Tbsp of balsamic vinegar

2 Tbsp of extra virgin olive oil

Sprinkle of pepper (optional)

Directions

Wash spring medley lettuce mix and put into a bowl.

Put into salad, strawberries, apples, roasted pepper, avocado, cherry tomatoes, cucumber and carrot shreds (take a peeler and simply peel carrot and cumber length wise to get pieces of shred).

Sprinkle choice of cheese, remaining olive oil and balsamic, pepper and serve.

Optional dressing to increase the sweetness is Wildtree Raspberry Dressing.
