Yum Alert: Lemon Rosemary Cookies

Lemon Rosemary Cookies

This past weekend my good friend and I decided to indulge in some cookies from NYC’s Grey Dog Cafe. I stepped away from my usual route of choice (chocolate chip cookes) to try their lemon and rosemary glazed one’s. As the cookie aficionado that I am, I would say that they were one of the top five cookies I’ve had in my entire life.

While this recipe is not the same as Grey Dog’s made them, they’re pretty close and just as delicious.

Ingredients: Cookies

  • 1 cup GF Flour Mix*
  • ½ cup sweet rice flour
  • ½ cup powdered sugar
  • ½ teaspoon xanthan gum
  • ¼ teaspoon salt
  • 8 Tablespoons butter, room temperature
  • 1 egg
  • 1 teaspoon vanilla
  • 1 Tablespoon lemon zest
  • 1 teaspoon lemon juice
  • 1 ½ teaspoon rosemary, chopped

Ingredients: Lemon Glaze

  • 1 cup powdered sugar
  • 1 Tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon milk
  • Rosemary sprigs, for garnish
