You read the title correctly. In spite of its outward appearance, this Greek yogurt cake is healthy. Well, pretty much – it uses Greek yogurt! Regardless, who would even want to try to resist something that looks this perfect? Recipe and image via Never Homemaker.

Ingredients:

For the Greek Yogurt Cake:

1/4 plus 1/8 cup dark cocoa powder (Dutch-process)
1/4 plus 1/8 cup hot water
1-1/2 cups wheat pastry flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon coarse salt
3/4 cup canola oil
1 plus 1/8 cup natural sugar (I used Sugar in the Raw)
Egg replacer for TWO eggs (I used Bob’s Red Mill egg replacer)
1 tablespoon vanilla extract
1/2 cup OIKOS Greek yogurt

For the frosting:

6 ounces OIKOS Greek yogurt (plain will do)
1 Tbsp vanilla
1/2 cup MaraNatha dark chocolate almond spread (or regular peanut or almond butter)
3/4 cup powdered sugar
