YUM ALERT: Emily’s Tequila Cake With Training Wheels

“Pretty much amazing if you like tequila.”

I just received an e-mail from my baking muse, Emily, – and had an urgent feeling to share with you alcoholics before you decide to DRINK to get drunk tonight (if you do – tequila drinks like these aren’t looked down upon). “I made a tequila cake last night, super easy and delish” This sentence couldn’t please me more. Adapted from two other recipes – with major tweaks & her kitchen twerk – Operation Yum is complete.

Emily’s Tequila Cake With Training Wheels

Beat the following together for 2 minutes:
One box white cake mix
One package lemon pudding
3 eggs
1/2 cup veg oil
2/3 cup water
1/4 lime juice
1/4 cup tequila
2 tablespoons triple sec

Pour it in a greased bundt pan, if you don’t have one you could probably use a 9×13 inch pan but bake for less time. Bake at 350 for 45-50 minutes.

Right when you take it out of the oven pour a shot of tequila over the hot cake. Once it is cooled glaze it with the following mixture; one cup confectioners sugar, 1 1/2 tablespoon of tequila, 1 1/2 tablespoon of triple sec, 2 tablespoons of lime juice.
