Yum Alert: Easy Peasy Gluten-free Chocolate Mousse

Attention Chocohalics: get down with ya bad selves.

Having a gluten allergy doesn’t have to keep you from stuffing your face with delicious chocolate. This chocolate mousse is really easy to make and tastes great. Here’s the recipe:

INGREDIENTS
adapted from The Pioneer Woman

12 oz. of good chocolate
4 eggs, room temperature.
2 tsp. vanilla extract
1 pinch of salt
8 oz. hot coffee

Directions: Throw everything but the coffee into a blender. Turn the blender on (important!). Once everything is looking smooth, slowly pour in the coffee. Blend for another minute or so. Once you’re done blending, do a tasting because it may not be sweet enough and you’re going to want to add some agave or sugar. Pour the mixture into cups or little bowls. Store in the fridge until the mixture is cold. Finally, once the mousse has reached a decent temperature, try really hard not to eat it all in one sitting.
