Um, bye New Year’s resolutions! I’m sorry, but starting the year with Cookie Brownie S’mores Cake can only bode well for the future. Recipe and image via Fat Girl Trapped in a Skinny Body.

Ingredients:

For the brownie layers:

2 sticks unsalted butter
2 1/4 cups sugar
4 large eggs
1 1/4 cups Double-Dutch Dark Cocoa or Dutch-process cocoa
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon espresso powder (or instant coffee)
1 tablespoon vanilla extract
1 1/2 cups All-Purpose Flour
2 cups chocolate chips (semi sweet used here)

For the cheesecake layers:

1 1/4 pounds cream cheese (20 oz), room temperature
1 cup sugar
1 tsp vanilla extract
3 large eggs
1/2 cup sour cream

For the chocolate chip cookie layer:

3/4 cup butter
1 cup brown sugar
1/2 cup sugar
1 egg
1 1/2 ts vanilla
1 tsp baking soda
1/2 tsp kosher salt
1 cup mini chocolate chips (semi sweet or milk chocolate)
2 cups flour

For the frosting:

6 ounces unsweetened chocolate, melted and cooled (I let it cool about 1 hour, stirring occasionally)
4 1/2 cups confectioners’ sugar (no need to sift)
3 sticks (12 ounces) unsalted butter, at room temperature
6 tablespoons milk
1 tablespoon vanilla extract

And finally, for the marshmallow filling:

1 jar (7 oz) marshmallow fluff
1 stick butter, room temperature
1 cup powdered sugar
