Yum Alert: Chocolate Pistachio Biscotti

These biscotti cookies will have your mouth watering.

These biscotti cookies are perfect for a crisp spring day. Now imagine how they would taste dipped into mint chocolate chip ice cream. Yum!

Ingredients

1-2/3 cup all purpose flour

1/2 cup unsweetened good quality cocoa powder

1-1/2 tsp baking powder

pinch of salt

3/4 cup whole pistachios

2 oz butter (1/4 cup), softened

3/4 cup superfine sugar (you can put sugar in food processor)

2 large eggs

Directions

Preheat oven to 375°. Line baking sheet with parchment paper.

In a medium bowl, combine flour, cocoa powder, baking powder, and salt. Add pistachios, and mix.

In a mixer, mix butter and sugar on medium speed for 1-1/2 minutes. Add eggs, one at a time.

Add the dry ingredients and mix on low speed until just combined to make a dough.
