Yum Alert: Gluten Free, Vegan Peanut Butter-Filled Oatmeal Muffins

These peanut-butter filled oatmeal muffins are little hugs in a cup! Better yet, they’re vegan, free of gluten, and can be made free of refined sugar. Image and recipe via Ari’s Menu.

Ingredients:

Yields a dozen muffins

  • 2 cups sweet rice flour
  • 1 tsp baking powder
  • dash salt
  • 1 tbs milled flax seed
  • 1 tbs corn starch
  • 1 tbs coconut oil, melted
  • 3/4 cup unsweetened almond milk
  • 1/4 cup fig butter
  • 1 cup cooked gluten-free oatmeal, room temperature
  • 1/3 cup dried cranberries
  • approx 1/3 cup peanut butter
